Rich and full-flavored, our tender pasta is made from the hearty winter wheat of the American Midwest. We mix durum and semolina flours with pure water and whole fresh eggs to create pasta that is prized by chefs at Charlotte’s finest restaurants. Retail customers buy it by the pound, cut to order in traditional Italian widths ranging from Angel hair to Fettuccine. For those who want to create their own pasta dishes, we also offer 6 x 16” sheets of uncut pasta. Economical and hearty, fresh pasta comes in over a dozen flavors and is ready in minutes. In addition to noodles, we make our own ravioli using world cuisine flavors, from a Latin American version with smoked chicken and spicy jalapenos to a local sweet potatoes rendition made seasonally. We offer succulent lobster and crab ravioli, a woodsy wild mushroom version that is great with red wine, and meaty filled with Italian sauces and cheeses. We also create gnocchi, a plump pasta dumpling made with ricotta cheese that is especially good if cooked and then sautéed in brown butter until crispy.

Because our shop is in the heat of a historic district, we’re surrounded by houses, not parking lots and stores. Some of our best customers are our neighbors—they can’t resist the morning smell of big rounds of Tuscan flatbread baking in our ovens. A process that can’t be hurried (the dough rests overnight); it produces an airy focaccia that has a crunch crust and a coarsely textured interior. We make four varieties, including one loaded with crumbly nuggets of toasted Italian Gorgonzola cheese. For adventurous do it yourselfers, we also make pizza dough. A family favorite, it can be shaped into loaves or filled for calzones. For those who want a good loaf of artisan bread, we carry baguettes, ciabatta, and stirato rolls from New Jersey’s Tribeca oven. Their loaves are hand shaped and scored, baked in small batches and made with only natural ingredients.
Our focaccia (Tuscan flat bread) is made from an age old recipe and baked fresh each morning. Available by whole or half.

Desserts in our grocery section at Pasta and Provision include amaretti (a little cookie made with paste from almonds or the kernels of apricots, pizzelles (a molded wheel shaped cookie), and panettone (a holiday bread with candied fruit and nuts). In the frozen section, don’t miss the clamshell-shaped sfolgliatelle, a densely layered pastry that is baked and then filled. Traditional Italian fillings include almond paste or orange flavored ricotta cheese. When available, frosty single serves of lemonicello, a sorbet like dessert, are kept in the back.
